For this holiday season I came up with an idea to make some Santa themed pancake towers. These would be great, if you still don't know what to make for breakfast on Christmas.
For two Santa pancake towers I used 2 teaspoons of powdered sugar, 2 fresh strawberries, 4 big and 2 small fresh blueberries, ...
some whipped cream in a can, strawberry jam, ....
2 skewers, and...
small pancakes, approximately with a diameter of 7-8cm, made from any of your favorite American pancake recipes or mixes. I used my all time favorite recipe from allrecipes.
Directions
First apply a light layer of strawberry jam on each pancake with a knife except for the last one which is for the top of the tower. Basically, for each Santa, I had 7 pancakes with a topping and one without. You can alternatively use Nutella, whipped cream, syrup, or whatever you think tastes good with it.
Sprinkle some powdered sugar on the plate by using a spoon and a sieve. Place one pancake with the topping on a plate. Then stack them up, press on each one of them gently, and secure the tower with a skewer. Remove the remaining of the long skewer by cutting it of with the scissors, but not all of it, because you still need it to hold the strawberry hat. For the second Santa, place another pancake with topping on the same or different plate and repeat the process.
Now cut of the butt of each strawberry and add them to the top of each skewer.
Before you start spraying the whipped cream beard on the pancakes, let the pancakes cool for a little to prevent it from melting. When cooled, create the beard starting in the middle of each tower. For the nose i used a small blueberry and placed it on the beard and for the eyes I used the big ones by pressing them in between the second and third layer so they don't fall out. Last but not least, sprinkle some extra powdered sugar over the towers for some snow effect.
